Seven-year-old Alyssa Orr from Southland is part of our ambassador programme, and is all too familiar with respiratory illnesses having been a regular patient at Southland Hospital since she was a baby. 

Alyssa has chosen to make balloon cupcakes for her Country Day at school to help raise awareness of asthma and other respiratory conditions. Balloon's are a symbol for asthma as it is often hard for asthmatics to breathe out, such as when blowing up a balloon.

Alyssa’s Chocolate Cupcakes


Ingredients


125g Butter                             1 and ½ cup Flour

1 cup Sugar                             2 teaspoons baking powder

2 eggs                                     2 tablespoons cocoa

2 tablespoons syrup                1 teaspoon baking soda (dissolved in 1 cup of milk)

 

Method

  1. Heat the oven to 180 degrees
  2. Soften butter
  3. Cream together butter and Sugar
  4. Add eggs
  5. Add syrup
  6. Dissolve baking soda in cup of Milk
  7. Sift Flour, Cocoa and Baking Powder (Dry ingredients)
  8. Add dry ingredients and milk to mixture, and mix.
  9. Grease cupcake cases and put in to about ¾ fill.

Bake 12-15 minutes.


Icing:  Roll out some fondant icing. Stick with sugar syrup.
